Plantain
Plantain is bigger and firmer than a Canary banana and is always eaten cooked: fried, roasted, boiled or baked. Green, it is ideal for tostones and patacones; ripe, with an almost black skin, it turns sweet and is perfect fried in slices.
Good to know
Sweet and hot ají peppers
Sweet ají adds aroma without heat and is a staple of Caribbean and Venezuelan sofritos and stews. Hot ají brings the kick. We have both on many days.
Easy recipes
Tostones: cut green plantain into thick rounds, fry, flatten and fry again. Maduros: slice ripe plantain and fry until golden. Sofrito: finely chop sweet ají, onion, garlic and pepper and cook gently.
