How to choose a good coconut

Shake it next to your ear: if you can hear the water sloshing, it is fresh. It should feel heavy for its size, with no cracks or mould on the three “eyes” at the top.

Good to know

How to open it

Find the softest eye and pierce it with a corkscrew or a clean screwdriver to drain the water. Then tap round the middle with the back of a large knife, turning the coconut, until it splits.

Water and flesh

Drink the coconut water chilled. Eat the white flesh as it is, grate it into desserts or blend it into smoothies.
